A ONU declarou o ano de 2016 como Ano Internacional das Leguminosas
Secas com o propósito de elevar a consciência das comunidades sobre
a importância do papel destes alimentos, em diversas áreas entre elas a
saúde e a nutrição. As Leguminosas são por definição grãos contidos em
vagens. Estas dividem-se em leguminosas secas, que incluem o feijão,
grão, soja e lentilhas e frescas como as ervilhas e as favas. Do ponto de
vista nutricional, as leguminosas são ricas em hidratos de carbono de absorção
lenta, fibra, proteínas, vitaminas do complexo B, minerais, como o
cálcio, ferro, fósforo, potássio e magnésio, e fitoquímicos como os compostos
fenólicos. Considerando os valores de ingestão diária recomendados
pela EFSA podemos verificar que o consumo de 100 g de feijão
manteiga, preto ou de ervilhas suprem mais de 30% da recomendação de
ingestão em fibra, 19% da ingestão proteica e no caso da soja 30% da ingestão
em zinco, magnésio e fósforo. Por serem isentos de glúten podem
constituir, para os doentes celíacos, excelentes alternativas alimentares,
nomeadamente na substituição de farinhas em produtos de panificação.
Estudos epidemiológicos comprovaram que o consumo de leguminosas
pode diminuir em 22% o risco de doença coronária por diminuição dos
fatores de risco, por melhoria do perfil lipídico, diminuição da pressão
arterial, da atividade plaquetária e da inflamação. Pelas suas características
demostram possuir um importante papel, nomeadamente, na prevenção
de diversas doenças crónicas como a diabetes mellitus, na doença
celíaca e na redução do risco de obesidade e doença cardiovascular.
The United Nations declared 2016 the International Year of Pulses with the purpose of raising the awareness of communities about the importance of the role of these foods in various areas, including health and nutrition. Pulses are annual leguminous crops yielding from one to 12 grains or seeds of variable size, shape and colour within a pod. From a nutritional point of view, leguminous crops are rich in carbohydrates of slow absorption, fiber, protein, B vitamins, minerals such as calcium, iron, phosphorus, potassium and magnesium, and phenolic compounds. Considering the daily intake values recommended by EFSA, we can verify that the consumption of 100 g of butter beans, black beans or peas supply more than 30% of this recommendation on fiber intake, 19% on protein intake, in the case of soy 30% of zinc, magnesium and phosphorus intake. Because Pulses are gluten-free, may be excellent alternatives for celiac patients, especially in the substitution of flour in bakery products. Epidemiological studies have shown that the consumption of leguminous crops can reduce the risk of coronary heart disease by 22% because of a decrease in risk factors, by improving the lipid profile, decreasing blood pressure, platelet activity and inflammation. For their characteristics, they play an important role, especially in the prevention of various chronic diseases such as diabetes mellitus, celiac disease and reduced the risk of obesity and cardiovascular disease.
